Well i found the Valve developers wiki (http://en.wikipedia.org/wiki/Valve_Hammer_Editor) very useful when wanting to create specific things.
I don't know why you don't want a list of tut websites but I've found these helpful in the past:
Beginners guide (http://www.moddb.com/tutorials/beginners-guide-to-valve-hammer-editor)
Large collection of tutorials in one site (http://www.pixel2life.com/tutorials/valve_hammer_editor/)

hammer from the source sdk i believe is the only hl2 world editor i believe. I know gtkRadient did hl1 as well as other games (cod,q3) but i dont think theres support for hl2(may be wrong)

www.thewall.de (http://www.thewall.de) is a damn awesome site to learn to map but you know you must understand german to understand the tutorials....so it´s kinda bad for british people but i learned ALL i have to know about mapping from that site!!
I find Hammer to be very much a 'learn by doing' thing, once you've finished the basic tutorials on the Valve Developer Wiki, you should just try and nut out some stuff, but you will have to look up the odd thing ;)
